GREATER ORANJESTAD. This traditional Swiss restaurant wins raves for the welcoming hospitality of the staff and the hearty, delicious food. Thick plaster walls with knotty-pine panels and modern air-conditioning will enhance the illusion that you are dining in an Alpine chalet. For starters try the lobster bisque or Dutch pea soup. Favorite entrees include the silky beef stroganoff, veal cordon bleu, and Chateaubriand for two. Dutch fried potatoes and grilled vegetables are common side dishes. For dessert, visitors and locals alike have one suggestion ­ Toblerone chocolate fondue.

GREATER ORANJESTAD. For a truly elegant meal try this traditional French restaurant. Situated in an old Aruban house from the 19th century, diners can sit indoors in the Pavilion Room amongst heavy draperies and brass gas lamps, or in the back greenhouse ­ an airy, atrium-style room. The menu features daily specials but many of your favorites such as escargot, Belgian endive salad, steak au poivre and crepes Suzette are always available. For a real treat try the bouillabaisse. It has more than a dozen different fishes and seafood, fresh from the oceans around Aruba.

GREATER ORANJESTAD. This Italian restaurant features Aruba's first open-air kitchen. Chef Vittorio is from Milan and enjoys presenting the tastes of Italy to the locals and visitors of Aruba. Try the succulent veal shank braised in dry white wine with fresh herbs and spices or the linguine with squid, octopus, shrimp, clams and mussels. For dessert try Aruba's best tiramisu.

Among the main courses, there are several excellent dishes from which to choose. Spaghetti Frutti di Mare includes all your favorite shellfish in a tasty marinara sauce. Vitello Alla Florios is a lighter preparation of veal simmered with artichoke hearts, white wine mushrooms. And their version of Linguine Calabrese combines pasta with olive oil, anchovies, black olives and walnuts. You may have a difficult decision to make here!
